Note that Swiss Water green beans are darker in color (matte brown) than regular green beans. This is normal!
Heat Management
The cellular structure of the bean is more porous due to the processing. They tend to accept heat faster, so keep an eye on your charge temperature and Rate of Rise (RoR).
The Crack
First crack might be quieter or softer than you are used to. Rely on your thermometer and smell as much as your ears.
